This cozy casserole is a family favorite and one of my go-to make-ahead meals—especially for holidays and beach vacations. It’s comforting, flavorful, and freezer-friendly. We use my homemade Cream of Chicken Soup and our crispy Gluten-Free Croutons to pull it all together.
2 (10 ¾ oz) of homemade gluten-free cream of chicken soup (or canned if preferred)
1 cup mayonnaise
½ teaspoon curry powder
1 teaspoon lemon juice
Salt and pepper to taste
2 (10 oz) packages frozen broccoli florets (frozen works best here!)
4 cups cooked chicken breast, chopped
Buttered gluten-free breadcrumbs or use my homemade gluten-free croutons pulsed in a food processor before buttering
Preheat oven to 350°F.
Mix sauce: In a large bowl, combine cream of chicken soup, mayonnaise, curry powder, lemon juice, and a generous pinch of salt and pepper. (Tip: Taste this mixture—it should be slightly salty and peppery, since it’s the flavor base for the whole casserole.)
Layer ingredients in a 9x13 baking dish:
Start with half the broccoli
Add half the chopped chicken
Spoon and spread half the sauce mixture
Repeat with remaining broccoli, chicken, and sauce
Top with buttered gluten-free breadcrumbs or crushed, buttered homemade gluten-free croutons.
Bake covered for 30 minutes, or until bubbling around the edges.
Uncover and bake an additional 5–10 minutes to brown the topping slightly.
This casserole freezes beautifully! Prepare it all the way through step 4, then cover tightly with foil and freeze.
To reheat, thaw overnight in the fridge, then bake as directed above.
