Gluten-Free Spiced Chai Cookies

Warm, buttery, and packed with cozy chai spices, these gluten-free spiced chai cookies are like a snickerdoodle with a bold fall twist.

The last time I made these and brought them to a party, they disappeared ridiculously fast.

People kept coming back for seconds... and thirds... and fourths. I’m pretty sure one person ate close to ten of them.

So yes, these are good.

They do require a fairly long list of spices, but trust me: if you love the warm, slightly spicy flavor of chai tea, these cookies are absolutely worth pulling all those spice jars out of the cabinet.

They’re soft, lightly crisp around the edges, coated in spiced sugar, and full of cinnamon, cardamom, ginger, cloves, allspice, and just a little black pepper.

Think of them as a gluten-free snickerdoodle that took a trip to your favorite chai shop.

  • Easy to make with simple gluten-free baking ingredients

  • Perfect for fall parties and holiday cookie trays

  • A fun alternative to traditional snickerdoodles

Ingredients

  • 2 1/2 cups Bob's Red Mill Gluten-Free 1-to-1 Baking Flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 3/4 cups granulated sugar

  • 2 1/2 teaspoons ground cinnamon

  • 1 teaspoon ground cardamom

  • 1 teaspoon ground ginger

  • 1/2 teaspoon ground allspice

  • 1/4 teaspoon finely ground black pepper

  • 1/4 teaspoon ground cloves

  • 1 cup unsalted butter, softened to room temperature

  • 1 large egg, at room temperature

  • 1/2 teaspoon Spice Islands Vanilla Extract

Instructions

  1. Preheat the oven.
Preheat your oven to 350°F. Line a baking sheet with parchment paper.

  2. Combine the dry ingredients.
In a large bowl, whisk together the gluten-free flour, baking soda, baking powder, and salt. Set aside.

  3. Make the chai spice sugar.
In a medium bowl, combine the sugar, cinnamon, cardamom, ginger, allspice, black pepper, and cloves.

  4. Reserve some for rolling.
Remove 1/4 cup of the sugar-spice mixture and set it aside. You'll use this to roll the cookie dough before baking.

  5. Cream the butter and sugar mixture.
Add the softened butter and remaining sugar-spice mixture to the bowl of a stand mixer fitted with the paddle attachment, or use a large bowl and electric hand mixer.

Beat until light and fluffy, about 2 minutes.

  6. Add the egg and vanilla.
Beat in the egg and vanilla extract until fully incorporated.

  7. Add the dry ingredients.
Slowly add the flour mixture and mix just until everything is combined.

  8. Shape the cookies.
Roll the dough into approximately 1-inch balls.

  9. Coat in chai sugar.
Roll each cookie dough ball in the reserved sugar-spice mixture until coated.

  10. Bake.
Arrange the dough balls about 1 inch apart on the prepared baking sheet.

Bake for approximately 8–10 minutes, or until the cookies are puffed, lightly golden, and beginning to crack across the surface.

  1. Cool.
Allow the cookies to rest on the baking sheet for about 2 minutes before transferring them to a wire rack to cool completely.

Carrie's Gluten-Free Engineer Tips

Don't Let the Spice List Scare You

Yes, there are a lot of spices in these cookies.

And yes, you really do want all of them.

The combination of cinnamon, cardamom, ginger, allspice, cloves, and just a little bit of black pepper creates that unmistakable chai flavor.

If you're already a chai tea fan, you'll immediately understand why they're worth it.

That Black Pepper Is Supposed to Be There

Black pepper might look a little strange in a cookie recipe, but don't skip it.

You aren't going to bite into the cookie and think, "Wow, pepper!"

Instead, it gives the chai spice mixture that little warm kick that helps distinguish it from a regular cinnamon sugar cookie.

Don't Overbake Them

You'll get the best texture when these cookies are removed while they're still soft in the center.

Look for the tops to become puffed and slightly cracked rather than waiting until the cookies feel completely firm.

They'll continue to set while they rest on the baking sheet.

Use a Good Gluten-Free 1-to-1 Flour

A quality gluten-free flour blend makes this recipe especially easy because you can substitute it directly without mixing several different flours.

I use Bob's Red Mill Gluten-Free 1-to-1 Baking Flour.

Make Your Cookies the Same Size

A small cookie scoop makes this really easy.

Getting the dough balls relatively uniform means they'll bake at the same rate, so you don't end up with one tray containing both underbaked and overbaked cookies.

What Do Spiced Chai Cookies Taste Like?

These remind me of a traditional snickerdoodle, but with a much deeper spice flavor.

You've still got that buttery cookie base and sugar coating, but the cardamom, ginger, cloves, allspice, and black pepper add layers of warmth.

Cinnamon might hit you first, but then you get all those other chai flavors behind it.

They're especially good if you're the person who orders a chai latte as soon as the weather starts cooling down.

Perfect for Fall Parties and Holiday Cookie Trays

These are absolutely a cookie I would bring to a fall potluck or holiday party.

They look simple, which almost makes people's reaction to them even more fun.

They take one bite expecting something similar to a cinnamon sugar cookie — and then all those chai flavors show up.

Based on what happened the last time I took them to a party, you might want to make a double batch.

People were coming back for three or four more, and I'm pretty sure one person managed to eat close to ten.

That's usually a pretty good sign you've found a keeper.

Storage

Store cooled chai cookies in an airtight container at room temperature for approximately 3–4 days.

Because gluten-free cookies can dry out faster than traditional cookies, make sure the container is well sealed.

Can You Freeze Spiced Chai Cookies?

Yes.

You can freeze either the baked cookies or the unbaked cookie dough.

To Freeze Baked Cookies

Allow the cookies to cool completely, then place them in a freezer-safe container with parchment paper between layers.

Thaw at room temperature before serving.

To Freeze Cookie Dough

Form the dough into balls, but don't roll them in the chai sugar yet.

Freeze the dough balls on a baking sheet, then transfer them to a freezer-safe bag or container.

When you're ready to bake, allow them to soften slightly, roll them in the reserved spice sugar, and bake.

You may need to add an extra minute or two to the baking time if the dough is still very cold.
