Curried Chicken Casserole (Freezer-Friendly!)

This cozy casserole is a family favorite and one of my go-to make-ahead meals—especially for holidays and beach vacations. It’s comforting, flavorful, and freezer-friendly. We use my homemade Cream of Chicken Soup and our crispy Gluten-Free Croutons to pull it all together.


⭐ Ingredients

  • 2 (10 ¾ oz) of homemade gluten-free cream of chicken soup (or canned if preferred)

  • 1 cup mayonnaise

  • ½ teaspoon curry powder

  • 1 teaspoon lemon juice

  • Salt and pepper to taste

  • 2 (10 oz) packages frozen broccoli florets (frozen works best here!)

  • 4 cups cooked chicken breast, chopped

  • Buttered gluten-free breadcrumbs or use my homemade gluten-free croutons pulsed in a food processor before buttering


🔪 Instructions

  1. Preheat oven to 350°F.

  2. Mix sauce: In a large bowl, combine cream of chicken soup, mayonnaise, curry powder, lemon juice, and a generous pinch of salt and pepper. (Tip: Taste this mixture—it should be slightly salty and peppery, since it’s the flavor base for the whole casserole.)

  3. Layer ingredients in a 9x13 baking dish:

    • Start with half the broccoli

    • Add half the chopped chicken

    • Spoon and spread half the sauce mixture

    • Repeat with remaining broccoli, chicken, and sauce

  4. Top with buttered gluten-free breadcrumbs or crushed, buttered homemade gluten-free croutons.

  5. Bake covered for 30 minutes, or until bubbling around the edges.

  6. Uncover and bake an additional 5–10 minutes to brown the topping slightly.


🧊 Make-Ahead & Freezer Tips

  • This casserole freezes beautifully! Prepare it all the way through step 4, then cover tightly with foil and freeze.

  • To reheat, thaw overnight in the fridge, then bake as directed above.
