I will admit that I have never really liked frosting all my life until I started making it from scratch. This Classic Vanilla Buttercream frosting is oh so tasty, not too sweet and oh so smooth and creamy!
If you use the recommended grass fed butter it will be even more divine! The taste of grass fed butter is no match to conventional butter.
Just look how smooth and creamy it is!
2 sticks butter softened to room temperature (I recommend this grass fed butter)
3-4 cups powdered (confectioner's) sugar (I recommend name brand with sugar when cooking, higher quality)
2 teaspoons gluten free vanilla
pinch of salt
2-3 tablespoons milk, heavy cream or half and half
Place sliced softened butter into your stand mixer bowl with the paddle attachment. Beat at a medium speed for about 3 minutes and it has gotten super creamy and lightened in color.
Add powdered sugar, 1/2 cup at a time to the butter. Mix after each addition on high speed for about 10 seconds to lighten the frosting.
Add the gluten free vanilla and a pinch of salt. Combine until incorporated.
Add milk, heavy cream or half and half one table spoon at a time until it reaches your desired consistency. For firmer frosting add more powdered sugar, about 1/4 cup at a time. For softer frosting, add more milk or cream a tablespoon at a time.
Taste test it for taste and consistency and enjoy on your favorite gluten free desert!
