Gluten-Free Pressure Cooker Mac & Cheese
This rich and creamy gluten-free mac and cheese comes together fast using your Instant Pot or any pressure cooker – perfect for a quick weeknight dinner or comfort-food craving. Plus, no baking required!
Ingredients:
12 oz uncooked gluten-free elbow macaroni
Try Barilla Gluten-Free Elbow Macaroni or Ronzoni Gluten-Free Elbow Macaroni
Note: Rotini-style pasta also works great in this recipe!2 ½ cups water
Add 1 Not Chick’n Bouillon Cube to the water – this makes a huge difference in flavor!
1 tablespoon butter
Dash of hot sauce (adds flavor, not heat!)
½ teaspoon pepper
½ teaspoon salt
1 teaspoon garlic powder (optional)
16 oz shredded mozzarella cheese
(We like to shred our own for better melt and fewer fillers)8 oz shredded sharp white cheddar
⅓ cup shredded Parmesan cheese
Up to ½ cup milk (optional – add only if needed for creaminess)
Instructions:
Add the uncooked gluten-free pasta, water with bouillon cube, butter, hot sauce, garlic powder, pepper, and salt to the Instant Pot or pressure cooker insert.
Secure the lid, set to Sealing, and select the Manual (Pressure Cook) function on High Pressure for 5 minutes.
When the timer is done, Quick Release the pressure.
Open the lid carefully and stir in all the shredded cheeses. If the mixture seems too thick, stir in a little milk (up to ½ cup) until you reach your desired creaminess.
Taste and adjust seasoning as needed. Serve warm and enjoy!
