🍲 Gluten-Free Ground Turkey Soup (Cozy + Protein Packed!)

If you're looking for a cozy, nutrient-packed, and totally gluten-free meal that comes together quickly, this Ground Turkey Soup is perfect for you! It's full of flavor from Italian seasoning and fire-roasted tomatoes, boosted with protein from chickpeas and turkey, and made extra comforting with a hearty broth. It’s one of my go-to weeknight meals, especially when I want something that feels nourishing but isn’t fussy. Bonus? It reheats beautifully for lunch the next day!


Ingredients

  • 2 tablespoons olive oil

  • 1 lb ground turkey

  • 1 medium yellow onion, diced

  • 1 large bell pepper, diced

  • 3 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • ½ teaspoon sea salt

  • ¼ teaspoon black pepper

  • 1 (14.5 oz) can fire-roasted diced tomatoes (with liquid)

  • 1 (15.5 oz) can chickpeas, drained and rinsed

  • 5 cups reduced-sodium chicken broth

  • 1 medium bay leaf

  • Fresh parsley (optional, for garnish)


Instructions

  1. Brown the Turkey:
    In a Dutch oven or large soup pot, heat olive oil over medium-high heat. Add ground turkey and cook for 5–8 minutes, stirring and breaking it apart, until no longer pink.

  2. Sauté the Veggies:
    Stir in diced onion, bell pepper, garlic, Italian seasoning, salt, and black pepper. Sauté for 5 minutes, until the veggies begin to soften and everything smells amazing.

  3. Add the Good Stuff:
    Pour in the fire-roasted tomatoes (including liquid), chickpeas, and chicken broth. Toss in the bay leaf.

  4. Simmer:
    Bring to a gentle boil, then reduce heat, cover, and simmer for 10–15 minutes. This allows the flavors to meld together beautifully.

  5. Finish & Serve:
    Remove the bay leaf. Ladle soup into bowls and top with fresh parsley if using. Serve hot and enjoy!
