Gluten-Free Banana Bread
Soft, comforting, and packed with banana flavor, this is one of our family’s favorite go-to recipes. Perfect for breakfast, snacks, or freezing for road trips and holidays.
📝 Ingredients:
1/2 cup butter, softened (I like to use Kerry Gold Butter!)
2/3 cup milk
2 large eggs
2 1/2 cups gluten-free all-purpose flour (with xanthan gum)
1 cup white sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2/3 cup mashed bananas (I usually use one whole banana)
1/2 cup chopped walnuts (optional!)
🔁 Bread Machine Instructions:
Spray the bread machine pan with non-stick cooking spray.
In a large bowl, premix all ingredients in the order listed until well combined. (I skip this step and just help my break machine during the mixing stage)
Pour the mixture into the bread machine pan.
Select the Quick Bread/Cake cycle and press Start.
After 1 minute of mixing, open the lid and check if the batter is blending well. Use a rubber spatula to scrape the sides if needed.
Let the machine complete the cycle.
Carefully remove the pan and let cool completely before turning the bread out.
🔥 Oven Baking Instructions (Alternate Option):
Preheat oven to 350°F (175°C).
Spray a 9x5-inch loaf pan with non-stick cooking spray or line with parchment paper.
In a large bowl, mix all ingredients together until just combined. Don’t overmix.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 50 to 70 minutes, or until a toothpick or cake tester comes out clean from the center.
Cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.
💡 Tips & Notes:
For dairy-free: use plant-based butter and dairy-free milk.
Want a deeper flavor? Let the bananas ripen until very spotty or black.
This bread freezes beautifully — slice and store in an airtight container or freezer bag.
Serve warm with a pat of butter or a drizzle of honey!
